Vegetables are the part of our regular diet. The word, vegetable, is used to refer to the foods obtained from the plants, which do not belong to the other categories of plant-based foods such as fruits, nuts, and grains. However, some seeds like pulses are considered vegetables. They are basically the parts of a plant that can be consumed by humans.

Vegetables can be eaten in their raw form or used in cooking to make various dishes. Different parts of the plants can be used for human consumption including the roots, and stem.  They play an important role in maintaining the nutrition of the body. They are usually low in fats and carbohydrates. However, most vegetables contain a high amount of vitamins and minerals. Vegetables are also a rich source of fibers. Hence, people are advised to consume fresh vegetables on a regular basis to maintain their health and prevent diseases.

They also contain antioxidants, vitamin A, vitamin C, and vitamin E. It has been found that people who eat fresh vegetables on a regular basis have a lower incidence of diabetes, cancer, stroke, heart attacks, and high cholesterol.

Vegetables also possess antibacterial, antifungal, and antiviral properties, which help in the prevention and treatment of infections. The anti-carcinogenic properties of some vegetables can help in reducing the risk of cancer and also help in the faster recovery of patients already suffering from the disease.

Hygiene is an important factor that should not be ignored while handling and cooking vegetables. They need to be cleaned and stored properly to reduce the risk of contamination.
